Definite channeling but can't figure out my issue... [Gaggia Pro Classic 2019 / Eureka Mignon]

I just cannot figure out where I'm going wrong here. Extraction was 15g in with 30g out in around 23 seconds.

Using a Gaggia Pro Classic 2019 with 9 bar OPV mod, 15g VST Competition basket. Coffee is a Light Roast blend from Grindhouse, roasted 2 weeks ago - which I typically find to be the sweet spot.

There's a dryness to the shot, but also some bitter and sour notes - which indicates it's channeling as some sections over and under extract. I've tried making the grind finer and coarser and I'm just.... ugh

It start out fine it looks, maybe a tad quick even, but I can't seem to get rid of the channeling completely.

First clip is an excerpt from the extraction just to show the channeling, then the full extraction, the prep before the extraction to see if I'm doing something wrong here.

I cannot figure this one out and it's driving me nuts!

So we're moving into our new home soon, and we need to decide on what to do for window treatments soon, or sleep in full view (ish) of the neighbours.

We have these beautiful windows in our bedroom, we would like to have a light filtering or difusing layer, and a blackout layer, ideally one of which being curtains to help with dampening the sound and echo.

The question is what would look best? There are a few options:

  1. Light difusing or filtering curtain, with a blackout curtain over the top
  2. Light difusing or filtering blind, with a blackout curtain over the top
  3. Blackout blind with light difusing or filtering curtain

I'm not sure which is going to look best or be the most functional. This is a South facing window, so certainly in the summer I imagine at least the lighter of the two treatments will be drawn most of the time to keep it from getting too hot.

Couple of things too: The sliding door on the left is being replaced with something plainer, and matching the walls in colour.
