

White Chocolate Coconut Lime Blondies🍋🟩🥥🤍

Coconut Lime White Chocolate Blondies -
Thick, chewy, browned butter blondies with toasted coconut, white chocolate chunks, fresh lime zest/juice, and flaky salt
INGREDIENTS
Wet:
- 170g unsalted butter
- 200g brown sugar
- 50g granulated sugar
- 2 large eggs
- 1 egg yolk
- 2 tsp vanilla
- 1/2–1 tsp coconut extract
- zest of 2 limes
- 1–2 tbsp fresh lime juice
Dry:
- 190g all-purpose flour
- 1/2 tsp salt
- 1/2 tsp baking powder
Mix-ins:
- 120–150g white chocolate chunks
- 60–80g sweetened coconut flakes
Finish:
- flaky salt
- extra lime zest if desired
INSTRUCTIONS
Brown the butter over medium heat until golden and nutty smelling. Transfer to a bowl and let cool slightly.
Rub the lime zest into both sugars with your fingers until fragrant.
(Optional but SO worth it) Toast the coconut lightly until golden.
Whisk together:
- browned butter
- sugars
- eggs + yolk
- vanilla
- coconut extract
- lime juiceFold in:
- flour
- salt
- baking powder
Then fold in:
- white chocolate
- coconut
DO NOT overmix.
Spread into a parchment-lined 8x8 pan. Top with extra coconut + white chocolate if desired.
Bake at 350°F for ~30–40 minutes until the edges are deep golden brown and the center still has a slight wobble.
Finish immediately with flaky salt.
