Anyone had their loved one with Parkinson’s/dementia start refusing medications? How to handle

I’m a co-caregiver to my mom (74) who has been diagnosed with Parkinson’s and Parkinson’s dementia. She has severe behavioral issues at times which include screaming, crying, threats to harm herself and others and at times trying to leave the house (she lives with me currently).
My dad is her main caregiver but I’ve become much more involved in her care as it becomes increasingly overwhelming. We are waiting to get her into long term care.

She has many moments of lucidity which makes it harder at times because she denies she has dementia and is still able to Google things and be aware of what’s going on.
She is now stating she wants to be completely off of her quetiapine because of how drowsy it makes her feel. She doesn’t care that it somewhat helps her meltdown episodes. She says she doesn’t care what doctors say, she will no longer be taking it.
What do we do in this situation?? Any suggestions?
