What should I include in my plans for a solo week long trip to New Brunswick, Prince Edward Island, and Nova Scotia that focuses on day hikes?

I'm looking for help in creating an itinerary for just me for a 7 day trip to New Brunswick, Prince Edward Island, and Nova Scotia. I really enjoy spending time on day hikes, enjoying nature, and visiting unique places. Since I have a lot of food sensitivities (no gluten, no alcohol, no shell fish, plus others) and I'm a middle aged woman who will be traveling alone, I'm a "non-foodie" and not interested in going out at night. I'll be driving my own car from Massachusetts so I'll have transportation (and 2 more days for driving for 9 days total).
Where should I go? Are there specific trails that I should be sure to take? What are the must see sights? Any recommendations for the route or accommodations? When is the best time for me to go so that I can enjoy the experience without over spending? What else do I need to know? I appreciate any recommendations that you have!
