Is Rikon plus CBN wheels also appropriate also for Kitchen knives?
Im a total newbie at lathe work. I do have a lot of experience sharpening kitchen knives, but with flat stones. I just got a good deal on a used Jet 1221VS and some HSS chisels. I am strongly considering getting a RIKON 1hp bench grinder with two CBN wheels and the Wolverine Jig (maybe 180 4-in-1, plus a 600 or 1000), so I can use HSS tools.
Its going to be hard to justify the cost of this to the wife if its only for lathe tools, but if i can also use this setup to reliably sharpen kitchen knives WELL (not ruin their profile or temper), then it seems like a good buy. We have several Shun knives that have a very thin profile and high rockwell rating and i think a 15 degree bevel.
Does anyone here with a CBN wheel setup also use it to keep their kitchen knives sharp? Ive seen that Tormek sells just a bar that i think i can fit on the wolverine jig, so i can get the Tormek knife jig. I'm just not sure if its actually appropriate to sharpen an expensive kitchen knife on a 1000 grit CBN wheel, or if ill have the ability to adjust the angulation to set the right bevel on different knives.
