My hack for freezing scrambled eggs
I was reading up on different ways to freeze scrambled eggs so they wouldn't be gummy or grainy. There were a lot of suggestions to use milk but I didn't have any.
So I tried grated parmesan cheese and I am very happy with the result! I don't notice any change in texture when I microwave it from frozen.
I use the parmesan in place of salt, so no need to add extra salt (imo). I use the grated parmesan from a major brand in the US grocery stores. I'm sure there's more than just cheese in there but I'm happy with the texture.

I’m freezing scrambled eggs for meal prep and use them in ready-to-go protein breakfast bowls.
I take a small glass bowl with a lid like Pyrex or Anchor Hocking, add scrambled eggs, add crumbled bacon that I baked in the oven, add shredded cheese, and some salsa. Then put on the lid and freeze.
I take the frozen bowl, remove the lid, cover with paper towel, microwave for 60 seconds. Stir, then microwave for another 30 seconds. Stir again and if not hot enough, microwave 15 seconds at a time. Don’t microwave for too long or it will mess with the texture.
