Trying to find ANY Canadian record of my 2nd great-grandmother's birth or baptism
I have US census records showing she was born in Canada and based on marriage records and death certificates I can trace her family into the migration of Loyalists into Canada. Her name is Lucy Almeda Parker (she married Melvin Blossom). Her parents were William Henry Parker and Margaret Adelaide Dittrick but I cannot find either of their birth or marriage records either. I even have academic documents and land records that place her grandparents in Canada. She was born in 1873 in Ontario and her family apparently moved to Michigan in 1877, so I have consistent US census, marriage, and death records that reflect the ties to Canada.
This document references her great-grandparents, Jacob Dittrick and Margaret Picard settling in St. Catharine's, Ontario and helping fund the first church there.

In my research it looks like the modern-day Spire Church is the church that would be holding the records of baptisms, etc. from the time period I am interested in.

But when I go online I get a little confused about what to do next. It looks like this may be where I could look for the records but I am not sure how to go about it. I found this document online that seems to index the years that would be helpful to find records of her birth/baptism, but how to look? It doesn't look like there are records online?
I haven't been able to find their family on the census, despite a lot of land records placing her extended family in Grantham and/or St. Catharines. I reached out to the Genealogical Society of Toronto and they did extensive searches and found no records - but I believe most of their searches were online databases.
I have the full membership at Ancestry and have looked on FamilySearch but I am admittedly new to this and not sure how effective my searches have been. Any help/suggestions would be gratefully accepted!
