Unstable casual role I enjoy or stable permanent position i'm unsure about?

I'm a civil operator currently on a 4 month casual contract with full time hours earning $42 P/H. (Weather dependent)

A company has reached out to me for a permanent full time position earning $35+ (Wage is still to be negotiated but high 30s have been confirmed.).

The issue is that the role has no over time, so i'm probably looking at $1100 per week after tax. But it isn't weather dependent. Without going too much into detail the work entails basic yardwork for approximately 6months with the promise to get my truck license, and move up into another role of my choosing.

I have 6+ years as an operator and can always go back to it but i'm wondering if jumping ship is the right choice as doing work like washing trucks or cleaning up the yard might not be stimulating enough and i've learned not to trust promises a company makes as they lead to no where in my experience. But if they actually intend to upskill me in 6ish months then the role is very appealing.

The company is Aussie owned and is rapidly expanding.
