Tapering off PPIs?

I have had gastritis for 4 years now. Didn't get diagnosed until recently and my main and pretty much only symptom is massive bloating that is truly unbearable. I also have constipation (which has gotten much better) and occasionally get that burning sensation and nausea. Diagnosed with mild chronic gastritis.
My doctor is no help. He prescribed me PPIs but I am on my own for how I should take them. I have been on 40mg pantoprazole for 2.5 months now. I want to taper down to 20mg and then to nothing. I am on a strict gastritis diet and it is definitely helping.
My digestion has improved significantly. I still bloat after everything but it is much less and at least bearable. I feel like I need more stomach acid to digest my food.
My nausea and burning are relieved, it's just the bloating that's still bothering me. I know that bloating is often the last symptom to resolve so should I taper down now? Or is there a benefit to being on this drug for longer?
