
Using a recteq flagship 1100.
Smoked a few full briskets before, no problem. I’ve typically wrapped them in foil. Trying just a flat today for the first time and am wrapping in butcher paper for the first time. You can see a very steady temp climb while it was unwrapped. Pulled it off the grill, wrapped it, and put it back on, which is where you see the 2 temp drops from the grill. The probe after it gets wrapped just seems to go crazy. I’ve never had temp jumps like this. I pulled it off a second time to check it with a handheld thermometer instead of the built in probes and they read around 180. Any ideas why it’s jumping all over the place? What do I do to try to get it to climb steadily again? Should I just wrap the sucker in foil?
