I know it wasn't exactly realistic or particularly Christian-like for Henry, but I still don't see why it was removed. I'm aware that you can perform it if Henry knocks an enemy out first, but not directly with a weapon. Imagine if they had expanded on the default mercy-kill animation in KCD2 and added unique animations for different weapon types - that would've been a really cool feature...
