Game plan for Penny evaluation

So, I’m ready to embark on evaluating about 5-6 gallons (they are in two 3/4 full five gallon buckets) and I need to know what you all recommend.

I was thinking that all the coins from 1982 backward are worth 3 cents each.

What else should I do? New to collecting.

For example, set up a bunch of solo cups and sort them by year and sort them by mint mark? Make rolls?

I was thinking it would be great to have a cheat sheet of all coins with more than 50 cents or a dollar and up?

What the strategy I should follow since a lot of you might have done a similar project.
