Looking for a good kitchen knife gift for my girlfriend, need advice

Hi all, I’d like to get my girlfriend a nice general-use kitchen knife (or maybe two) for her birthday, but I know basically nothing about knives. Right now we have a pretty standard Cuisinart 15-piece knife set.

She cooks a lot of different things, but especially loves making stews and soups. My budget is around $250, though I’d be willing to go a little higher. I’ll probably also get a small stand or magnetic block so it can sit on the counter next to our current set.

I’ve been looking at Chinese cleavers, but I’ve also been recommended a santoku or gyuto, and I’m not sure what would make the most sense for her.

Would a Chinese cleaver be practical as an all-purpose daily knife, or more of a specialty thing?

Any specific recommendations in that price range?
