Heating mould during infusion

Anyone else have their preferred method of heating their moulds? Im currently only using a heatlamp, only adjusting the distance to the heat source to adjust for 45-50c. I have seen people heat up their mould from underneath but unsure how. Using a heatlight like this is quick but if careless it could shot up the temperature too high and ended up causing issue with the pva

Ketam sambal

Pasar tani brought fresh crab today. Took seven of them big ones home. If you want to know if the crabs are fresh, pick them up and see if they're heavy. If they felt a little light, chances are they been in and out of icebox a few times already, and get the male ones only. The females have eggsacks that are inedible.

Sambal was cooked perfection. Added one egg in, should have gone with two eggs though. It was very messy but in the end it was worth it. If you want to get your money worth, get these ketam bunga. The meat is probably the best out of all the ketam you can find locally. Today's price is rm55/kg, i got 2 kilos for rm100.

Masak lemak & ikan goreng

Pasar tani blessed me with fresh udang galah today. decided to cook half of the batch today, the other half is saved for next week. Switched to using kacang buncis instead of the usual kacang panjang. Paired the masak lemak with some crispy ikan goreng & kicap cili api. All the udang galah & ikan goreng didnt survive the assault.
