Do I have to join research to do any cool hands on Engineering Work?

If you're a Mech-E, Comp-E, or EE (electrical engineering) major what are some cool projects you've done inside or outside school?

It seems in freshman year engineering that you have to do a lot of self teaching/learning. Especially with the newer Fuel Cell car project. One of the things that I look forward to most is working on hardware and interesting software projects. Basically working on interesting hands on things while I learn. With the number of students in the engineering major (and the respective classes) does this mean that things like working on PCBs, soldering, and 3D design will continue to be a hobby until later and more specialized classes?
