Another month of giving celiac the ol’ 🖕

It’s not exactly convenient, but it’s still perfectly manageable. It took a few years before we genuinely felt good about our cooking but at this point the only thing we’re missing out on is … the big thing: convenience. 🥲

Mug Cinnamon Roll style cake (Gluten-Free)

I was in the mood for cinnamon rolls, so i tried that recipe.

Its delicous but doesnt taste really like cinnamon rolls.

But its quick and easy.

Dough

  • 4 tbsp Schär Universal Flour Mix
  • 1/3–1/2 tsp baking powder
  • 1 tbsp sugar
  • 4–5 tbsp milk
  • 1 tsp melted butter (or oil)
  • pinch of salt

Cinnamon Filling

  • 1–2 tsp sugar
  • 1/2 tsp cinnamon
  • 1/2 tsp melted butter (optional)

Glaze (optional)

  • 2 tbsp powdered sugar
  • a few drops of milk

Instructions

  1. Mix all dough ingredients in a large mug until smooth.
  2. Mix sugar and cinnamon, then sprinkle over the batter.
  3. Swirl it in using a knife to create a spiral.
  4. Microwave on high for about 60–90 seconds.
  5. Let it cool slightly, then add glaze if desired.

My safe snack just went up in price and now I’m stuck.

Whenever I had a specific chocolate craving, I would get the chocolate covered pecans from Wegmans. It was my favorite and safe go to. Now the price has doubled to $9.99, and it’s no longer feasible and I don’t know what I’m going to replace them with that both hits that specific craving and is actually gluten free and safe to eat. I’m just 😭
