For 6 straight years craft 64 which has two locations, one in Chandler and one in Scottsdale ,was not only named the number one pizza restaurant in Arizona but also the 29th best pizza in the world. The rankings are done by Top 50 Pizza. They are recognized as one of the authorities on Pizza from Italy to New York , Chicago , La and around the globe including Arizona of course. Myself and Matt from Arizona Pizza Lovers Facebook group were invited guests of the Chandler restaurant, to check out some menu items and we also purchased some items to check out, as we truly support local and small businesses. The 2 Pizzas we tried were the Honey Be which features The homemade mozzarella parmesan cheese pepperoni fresh cut jalapenos and wildflower honey. I want to emphasize the honey was not hot honey as the heat came from the fresh not canned jalapenos !! The other pie We sampled was the prosciutto cotto. It had aged prosciutto, homemade mozzarella, red onions, heirloom cherry tomatoes pesto and a balsamic glaze drizzle.

There is A 3-day fermentation process with the dough. They use the the Valoriani ovens !! The 2 ovens which by the way, are built into the wall, probably cost around $100,000 !!

Tiramisu

After watching that episode of the office a million times and never having tired tiramisu, I made one 🤣

Since I needed 16oz of marscapone, I want with half regular and half chocolate, whisk it in a bowl until creamy and set aside.

In 2 other bowls or pots, separate 4 egg whites & yolks.

Bring some water in a pot to a boil, reduce heat, and whisk the yolks over it w/ 2/3cup sugar until combined and it gets a glossy fluffy look.

Add the egg mix to the marscapone, 1tsp vanilla, 1/4tsp salt, & whisk until combined.

Bring the water back to a boil, reduce heat, and whip the egg whites w/ 1/3cup sugar over until you can flip the bowl upside down without anything falling out, then fold into the marscapone mix.

Dip the lady fingers in espresso, cover w/ half of the mix, another layer of dipped fingers, cover w/ the other half, top w/ cocoa powder, chill overnight, & enjoy!

Buffalo Chicken Ballotine

What do you do when chicken quarters are on sale? You peel them then stuff the skin 😆

Today on "Will it Blackstone?" Buffalo Chicken Ballotine

I also made some breakfast wraps and frozen pretzels 😂 the pretzels are actually great on here, leave them off to the side with some butter until they soften up, kinda like pizza rolls 🤣

This is how to make less than $5 of chicken look fancy 😁 it helps if it's partially frozen, it's easier to handle and less slippery/floppy Remove the skin and bones (save the bones to make a stock). Season the chicken w/ salt, pepper, paprika, and toss it with minced onion, garlic, and cheddar cheese. Roll it tight in the skin, rub w/ salt, and chill until ready to cook. Brown each side on medium heat until crispy and cooked through, brush w/ buffalo sauce, and enjoy!

I drizzled these with the same sauce in the breakfast wraps...

1/2c mayo

1/2c sour cream

1tbsp dijon

1tsp worcestershire

1/2tbsp lemon juice

1/2tbsp pickle juice

1/2tsp salt

1/2tsp pepper

1tsp onion powder

1tsp garlic powder

1/2tsp dill

Mix & adjust to taste
