Alla pantesca is from the island of Pantelleria where they have superb capers. The recipe is simple, fast and very forgiving: halved cherry tomato, pitted green olives, soaked and chopped capers (the salted ones), onion, garlic, dried oregano, s/p, EVOO, topped with toasted breadcrumbs. It is usually made with anchovy which I leave out, obviously.

Taushya Rava Bhakri is a traditional, mildly spiced flatbread made with cucumber and semolina. Soft, aromatic, and wholesome, it’s a cherished breakfast or snack from Konkani cuisine.
