Swapping in a 8TB ssd, can I downgrade OS?

When you use another Mac to go into DFU mode, can you go with a different MacOS version than the helper Mac?

I’m wanting to go back to sequoia from Tahoe. The MacBook used for DFU is Tahoe but wanted to take the opportunity to go back to Sequoia on the new drive.

I’ve seen this listing on eBay UK and wondering if it’s worth it given the shortages and long lead times.
It’s a good spec and worth £2k brand new. But delivery won’t be til mid-July.

Using you as a soundboard here for why this is worth paying the extra premium to have it in the next few days…
