Newbie here. Like barely a month old. I've failed TWICE now! My first starter just stopped rising. I got discouraged and dumped it out of emotion. My seceond one, created two days ago, i just saw developed mold somehow overnight..literally. It'd not dumped. So pleaseeeee help me what am i doing wrong?

1. I was using regular kroger brand unbleached AP flour. Should i switch to something different ?
2. I was doing a 1:1:1 but no scale. I have purchased one now.
3. These are the jars i have. Silicone ring on or off? Clamps on or off?

Any help/tips are greatly appreciated!
