Help me to improve flavor separation

Hi , now i have gaggia classic aluminium boiler with pid and dimmer (flow control). It is the red pne in the photo. I use it with grinder zentis nzr64 , ehp red speed burr. (What ehp stands for , i dont know). There are filter paper and puck scree redpectively on top of the puck. I can do espresso at 94-96 degree C at grouphead 20g In 40-45 g Out in 35s. The beans is costa rica mozart, raisin honey process, medium-light roast. The espresso i have got is with good body, sweetness, a little high acidity, medium aroma and good and long aftertaste. I would like to have a flavor separation something like 3-4 notes, but it has never been happen. There is always no any note.
Previously, i use gaggia evo e24 (the green one) with the same grinder. I did temp surf.and there were raisin and a little honey notes. Raisin note was always there

Please advise me how to tune this gaggia with pid and dimmer to get a 3-4 notes favors espresso. I have tried increase the temp , lower the temp, reduce and increase gram out but nothing makes any notes.

How to get less temp swing

From the installed SOC PID at my gaggia classic, the temperature went down from 94 to 89.5c during 35-38s after brew start, the offset is 8c, is this normal for pid?
What shall it be the water temp. once arriving at the puck surface? Is it the same swing gap?
How can i tweak this pid to get more temp. stability?
Is this the same temp. profile as Gaguiino or gaggimate? Because they use the same SSR to do switching?
Is there any other advises?
