Need advice after French Schengen visa refusal through French Consulate in New York (flight on June 1)

I applied for a French Schengen visa through the French Consulate in New York.
During my appointment, they did not take my father’s sponsor letter and financial documents even though my father is sponsoring my trip.
After the appointment, I contacted them and explained the missing documents situation. A few days later, they emailed me asking me to provide the missing sponsor documents, and I submitted everything they requested the same day.
I also had valid travel medical insurance covering the trip.
However, my visa was still refused. The refusal reasons say:
insufficient proof of financial means
no proof of valid travel medical insurance
This is confusing because I submitted both after they requested them.
My travel plan is:
Flight to the UK on June 1
Then Europe afterward
At this point I’m trying to understand:
Should I appeal or reapply?
Is there any way to speed up the process because of the upcoming flight?
Could the documents have not been reviewed properly?
Has anyone experienced something similar with France Schengen visas from the New York consulate?
Any advice would really help.
