How’d I do? I think she looks ok
100g starter
325g water
500g bread flour
10g salt
Dissolve starter and water. Add flour and salt. Mix until combined. Rest for 1 hour.
2 sets of stretch and folds 30 min apart
2 sets coil folds 30 minutes apart
Bulk ferment on counter for about 4 or 5 hours (honestly I kinda forgot how long because i was scared of overproofing)
Shape and place in banneton with rice flour. Into fridge for about 16 hours
Baked in aluminum dutch oven at 450 for 40 minutes, uncover and bake for 20 minutes at 400.
