diced tomatoes/tomato paste
quinoa (currently uncooked)
I also have some corn tortillas, canned corn, and assorted canned beans, though I'd like to go light on carbs
I could get a potato or some other item if necessary
Update: before I saw the notifications for these responses, I fried the meat with drained tomatoes, garlic, onions, and mushrooms;
the quinoa I've put with the water from the tomatoes in the casserole dish, topped with chopped bell peppers, zucchini, yellow squash, some canned corn, and more mushrooms, onions, and garlic. I covered it and put it in for 40 mins at 375° F. I put taco seasoning in both so I hope there's enough liquid (I figured some would come out of the vegetables).
I originally planned to put it all in the casserole dish, but I wanted to cook the meat prior the first time around so I didn't have to guess whether both the meat and quinoa were done, and then it didn't all fit.
I'll know in about 10 mins whether it worked 🤞
Update: the quinoa is done, and plenty of liquid; veggies are not. I put it back in uncovered for another 20 mins.
Update: it came out good. The bigger piecesof garlic are a little undercooked. I wound up mixing the meat in because it still had some juice and cooking uncovered had dried it out, then put it back in covered for another 30 mins.
