400 g AP Flour

150 g Wholemeal

350 g water

10g salt

Inclusions: Chilli Oil, Scallion, Salted Duck Egg Yolk and Cheddar Sourdough.

4 Sets of stretch and folds half an hour apart, Bulk ferment for 4 hours, second rise around 11 hours, bake at 450 degrees for 30 minutes with lid on, remove lid and bake for another 20 minutes.

This is my second sourdough, happy to take any suggestions!
