


first ever sourdough! please rate my loaf ✍🏼
The Recipe (Lara Clarke’s recipe)
• 370g water
• 100g active starter
• 10g salt
• 500g flour
Day before
Fed my starter 1:2:2 ratio the night before and left it to peak overnight
Mixing (12pm)
Mixed 350g water with starter and flour, rested 30 minutes then added remaining 20g water and salt
Bulk fermentation
1 stretch and fold, then 3 coil folds, 1 hour apart. Total bulk fermentation around 7.5 hours which fell right in the recipe’s 6-9 hour window
Shaping (7:30pm)
Shaped and put into a regular bowl (I don’t have a banneton yet) lined with a floured cloth, into the fridge overnight for cold proof ~ 12 hours
Baking
Dutch oven preheated 45 minutes at 245°C / 473°F, baked lid on 25 minutes then lid off at 225°C / 437°F for 11 minutes
Pretty happy with the crumb and oven spring for a first attempt but would love feedback on what to improve! 😄🍞
