Guidance regarding letter of Intent?

Hey, recently I'd been offered a "Founder's office" role at a startup. They have given me a Letter of intent stating only the job role and the joining date. They had also given a confirmation through email on the CTC being offered and the date of receiving the offer letter. I know the document is not legally binding and I have also heard some cases of companies withdrawing the offer prior to joining. I wanted to get a clarification if I should resign from my current job for this role or not. (I have a two month notice period and the joining date is almost 2 months from today).

the confirmation was through their official mail IDs and was given by the founder herself. The LOI is signed by the founder as well. Also, the brand has appeared on shark tank as well if that adds a bit of credibility. I also wanted to ask information about what could be the options available to me in case something fishy happens in future.
