How to tell if I’ve ground through all the hard steel of a san mai knife?

I have two old clad Japanese knives (which I assume are san mai). In theory (if I understand correctly), after enough sharpening, the edge should become only soft steel and won’t hold an edge, right?

Is is possible to check how much hard steel remains at the apex?

Just want to know how much “grind life” is left.

Knife identification help needed

I am sorry for showing you a knife in a bad shape. This is my first Japanese knife and my first restoration process.

The initial condition of the knife can be seen in the last photos.
