Adopt a blind and deaf cat?

We lost our beloved cat of 16 years earlier this year. She was found at one day old and bottle fed so she was extremely bonded to people. She also had numerous health issues throughout her life, including severe food allergies, IBD, numerous autoimmune disorders, acute flares of pancreatitis, and diabetes. She was also deaf from age 8 on.

Today we came across a one year-old cat for adoption. He is beautiful, but he is both blind and deaf from birth. Does anyone have experience raising a cat of this nature? I feel like our previous cat prepared us to care for a cat with special medical needs, but I'm just unclear if we're up for this challenge if the cat will not be able to find us in the house or climb into bed or find the litter box or manage a carpeted stairwell. My heart goes out to this cat and I know we could give it at home but I don't know how challenging or demanding he will be to raise.

Can those of you with experience with blind AND deaf cats help me understand how they acclimate and what kind of pets they make? Thank you.
