Best Visa arrangements after divorce?

Hoping someone here can advise.
My ex and I parted a number of years ago, but have not finalized divorce as marital status made it convenient to continue to sponsor her and my son (I have supported them financially in the years since, and we have a good co-parenting relationship with no animosity).
With time passing, it is beginning to feel like it’s time to finalize the divorce. We’re both in other relationships and it does feel like a barrier to moving on with our lives.
My only hesitation is around finding a sustainable structure for everyone remaining in Dubai after that process is complete.
My ex works for a company that does not provide a visa (I’ve been the sponsor and provided an NOC). We’re not sure as yet whether they would take on the additional cost.
There seem to be a whole range of ways of setting up companies that would provide a visa, but I’ve also read that if those companies aren’t active as businesses and generating revenue that can become an issue.
I know that she will get 12 months under arrangements for divorcees and widows, but I’m not sure how to best provide security of residency beyond that point.
I’m also not sure whether finalizing a divorce would immediately impact residency status, or whether she would be able to see out the term of whatever residency visa she is holding. If that’s the case we would time the process accordingly.
Any advice or insight would be very welcome.
