First time brewing beer - higher final gravity than expected

Hi everyone, last week I decided to brew my first beer. I used an all grain kit for Irish Red Ale, I used brew in the bag method, while following mashing temperatures and times in the kit.

~5.3kg of grain total, mash 30min @66c then 30min @70c, then 1min @77c, then sparge with 80c water, followed by 60 minutes boil with 30g of goldings hops (pellets, 4.3%aa).

I've got 22l of wort with a starting gravity of 1.052, after pitching yeast (US-05) and fermenting @20c in approximately 48 hours my gravity got to 1.021 (as indicated by my gravitymon) and it's been stuck at 1.021 for 3 days now.

According to the recipe my final gravity should be ~1.009. I'm planning to bottle carbonate using table sugar, in the recipe it says that bottling should be done 2 weeks after pitching yeast.

Should I be worried about fast fermentation? (I've only got experience with mead/fruit wines where fermentation is usually much slower, I've never used ale yeast)

If I bottle after 2 weeks, would there still be enough yeast in suspension to allow for bottle carbonation or should I add some yeast to each bottle if yes would ec1118 work or should I get some more US-05/other ale yeast?

Should I expect the beer to be overly sweet with final gravity .01 higher than in the recipe?
