First road bike after years of MTB and gravel. Where do I start? (~€700, used, carbon)

So I went to a bike festival in Riva del Garda last weekend and my buddy let me try his road bike for a few laps. I've been riding MTB and gravel for years and honestly never really got the road bike thing.
The weight difference is insane. I didn't expect to feel it that much but it completely changed how the bike moved. Now I can't stop thinking about it.
Problem is I have no idea where to start when it comes to road bikes. My budget is around €600-800 and I'd rather go used than new.
Carbon is the priority because that's literally what sold me on the whole thing, but I don't even know what groupset to look for, what geometry matters for someone coming from MTB, or what to watch out for when buying a used carbon frame.
Any advice? Brands to look for, things to avoid, where to buy used in Europe?

A €400 bike may need €150-200 in parts immediately. A €600 refurbished one often has it all done already. What do you think?
