New RV Owner, bought a 1992 Fleetwood Tioga Montara. Need input on best location for replacement inverter and breaker panel relocation.

My girlfriend and I bought this used 1992 Fleetwood Tioga Montara RV about a month ago and immediately started living in it lol. We bought it in Sacramento, CA and drove back to Reno, NV. Our plan is to remodel it with the intent to boondock when we need to but hook up where we can within reason and travel around the country and see friends.
Im trying to get this RV to be as off the grid as my budget will allow lol and I got lucky on FB marketplace and bought a used Victron Multiplus Compact 12v/2000va/80amp inverter, a Victron MPPT 100/30, a Victron Multi Control, and a Victron BMV-712 Smart Battery Monitor; all for $400 (didn’t include wiring).
So my question is: where do you think is the most optimal area to establish as the electrical hub? Ive attached photos of where the current and original inverter/breaker panel is, and where im thinking. I think underneath the area where the original fridge is located would be my ideal spot but im converned about how tight it is and i almost think above that is better where the fridge was since there is already an outside service panel for it lol. But we are about to be putting a much smaller mini fridge in that spot as well that will run off the inverter hopefully, but we shall see. I cant decide lol.
There is also a generator (last pics) that i would like to be connected to all of this. And after some research i found this:
But it’s a little expensive in my opinion, does anyone have any experience using 3rd party auto start kits?
I also included pics of the lp water heater (very weird spot in my opinion, i guess i need to learn more about how that routes through and works; i guess that might be what the pump is for lol), and the shore power box which i dont know if it would be good practice to use that cubby but seems convenient, and the furnace which i think I’m going to remove and use an AC powered space heater, or if anyone has a great suggestion for that i would love them. You can also see the old fridge access panel from the outside. Im trying to move away from lp as much as i can aside from the stove and cooktop. So any electric water heater suggestions would also be super helpful.
