I just checked E Ink's website and their B&W screen lineup is 6", 7", and 10". That's it.
6" is too small. 10" is too big. 8" was the sweet spot – and it's gone.
They do offer 8" in color, but honestly, I don't need color. It just drives the price up for no reason (for my use case at least).

The frustrating part? EInk essentially has a monopoly on eInk displays, so there's no "just buy from someone else." If they don't make it, it doesn't exist.

If you're in the same boat, drop a comment. If there's enough of us, maybe we can get their attention and push for the 8" B&W to come back.
