What’s the best way to take a cutting from this purple leafed tree? Am I right in thinking it’s a plum tree?

As you can see it’s a bit overgrown, should I take from these new bits of growth in the second photo?

Then what?

I am newbie.

I am also in a rental property with a garden and green house (this tree is in my father in laws house) so I would need to be able to take it with me when we leave which would probably be within a year.
