250k (330$) vs270k (530$) vs 7900X($585) 7950X ? for Minecraft server?

Already have 1x 32GB DDR5 to steal from my main PC. Budget is $1000 AUD for the rest in South Australia.

i Want a multi-server setup (players can hop between servers).

Leaning real cores over E-cores. Not rushing. Am I missing something like 1U server gear?

Also plan to run Linux

Yes, I know these CPUs are overkill kinda the point. Looking for solid advice or other options I haven't considered.
