9 days in Castille - sanity check on schedule?

I'm planning on flying out with my girlfriend on September 28th to Madrid, and she has to go back to work October 7th so I have 9 days to tour the area with her.

Two areas that stood out to me that I'd wanna see are Salamanca since it sounds gorgeous and the Ribiera del Duero (since I'm a bit of a wine geek and would love to see the vineyards). Other locations I've been thinking of are Segovia, Toledo, and Burgos, though I'm not certain whether the last one is too out of the way. And obviously Madrid. I want to know how realistic the schedule is. And obviously any suggestions on the route would be well appreciated as well. I'm more of the guy that loves to see the history of locations and learning all about it, as well as the food and wine culture, while she leans more towards beautiful nature so I'm trying to strike a balance here too so that it doesn't feel all too same-y.
