Confused.. normal bloodwork?

I got diagnosed with PCOS about 1.5 years ago. At that time, I had elevated testosterone, elevated ast & alt, and low HDL cholesterol. Everything else was normal.

After tons of research, I started supplements for PCOS, diet/exercise changes, decreased my stress levels, etc.

I just re-did my blood work and now everything is normal. Which is great!! However, tell me why I still cannot lose weight..... I did the extremely low carb diet and lost like 10 lbs last summer, but have gained that back since then since it wasn't sustainable. For reference, I am 5'8" and 178lbs. I know I don't have a ton of weight to lose, but I really would like to be around 155-160lbs ideally. I used to easily maintain that weight until about 4 years ago when I shot up to the 170s and cannot get it to budge. Advice??
