And a side I will bring. 250° for 3 hours with cherry wood. Sending it now.

What am I looking at here?

Pulled this pork shoulder out of the freezer after months. I don't recall seeing these white stringy bits before freezing. Hoping it's just collagen, but it only seems to be present at the very end of the roast. Thoughts?
