I got my first carbon steel knife this week and I noticed when I unboxed it (before I even used it(, there were these little orangish streaks on the knife near the handle. Is this rust? I know carbon steel rust fastest but I didn't expect this fast 😂
I am on a tour in Japan and on the lookout for a knife. Next week my tour guide is taking us to the Kikuichi Monju Store in Nara (the oldest cutlery store in the world afaik), which is a store he recommends, but he is not super well versed in chef knives. I will also have a chance to go to kappabashi
I am also an amateur chef looking at getting a Yanigiba for sushi/ sashimi and as a souvenir.
I recognize that Kikuichi is a very well respected smith, and they have a knife I would want, in my budget, (at least on their online store) but I could not find much about them online and I was wondering if I should get a knife there or wait and get one in Kappabashi. Where would I get the best 'bang for my buck' so to speak
