shishito peppers

I've never cooked with them before, but I blistered one today and it was delicious! I love the flavor. Smoky but without too much heat - family-friendly, for sure. Unless I hit a hot one on the package! But - how else do you use them other than shishito pepper poppers with a dipping sauce?

I'm thinking salsa but would love other ideas.
