Schnitzel + Velvet
Has anyone tried to make schnitzel after velveting the thin slice of pork? Does it work? Or does the trapped moisture result in separation of breading layer from the meat? I have been experimenting with velveting and marinates this past week and was looking to try coating and pan frying and would like to see if treating the meat prior to deep frying would result in it being more juicy.
