Starter continues to rise after it has “peaked”

Wanted to see if anyone else has experienced this, or if there is something I am doing wrong.

This morning, I fed my starter 1:1:1 around 10am. At 3:45pm, my starter was showing all the signs that it had peaked and was ready to bake with. I mixed my dough and moved on.

However, 2.5 hours AFTER mixing my dough, I noticed that my starter had continued to rise.

This has happened the last few times (maybe 5ish) that I’ve baked. My starter is roughly 3 years old, I feed it everyday, and bake with it 2-3 times a week.

Since this has happened the last few times, I decided to mark with the black band where my starter was after using to mix my dough. After 2.5 hours, it had risen this much. In my 3ish years of making sourdough, I have never seen this happen.

I do believe that my starter is peaked when I mix my dough. I have noticed no noticeable changes to my bread - in fact, I think it might have gotten better than before this started happening.

Any thoughts or advice? I find it so strange that this has just started to happen.
