Dealing with a strict boss

Hi everyone, new grad here just looking for some advice regarding my boss - for background I am a new grad working at a small animal practice. Me and my boss do get along very well and always have done, with her providing me great mentorship as a student and now as a new grad. I do feel a lot more capable at the basics now and I am comfortable with many surgeries as I have been lucky to get a lot of surgical experience.
My boss is known as someone who can be quite strict, and tends to take her anger out on others during stressful situations. She will tell people off for things that we have always done, just because she is in a bad mood. The atmosphere at work becomes incredibly tense when she isn’t happy, which everyone can feel. Even one of the other senior vets has been scared to make decisions without her approval for fear of a situation blowing up.
While I do stressed about the actual work, I have found I am more anxious about her rather than anything else I get faced with on the job.
This has started to make me incredibly anxious about work, to the point where I feel physically sick when she is in, even if everything is going okay. I am almost a year out, and was planning on staying here for two years until I am more confident, but I don’t feel like I can go on much longer and I consider quitting the profession as a whole on a weekly basis.
I get along so well with everyone - including her when she is in a good mood - otherwise, and when she isn’t in I feel great.
Any advice would be greatly appreciated, I don’t want to pour all my hard work down the drain but maybe this career isn’t for me.
