My husband and my special place used to be Handsome Daughter's Magic Bird on Sherbrook St. We LOVED it and were devastated when they closed up shop with no warning. We used to always get the Cheese Wizard (sandwich for him and basket for me). I know how to pickle jalapenos and I have a solid breaded chicken strip option but I have no clue what special seasoning they used for the curly fries and how to make the cheese sauce (maybe just a simple roux?)

I am desperate to remake this dish at home for us! Help me?
