I have an Evo 24 coupled with a (highly recommended at the time) Sage grinder. Grinder is now on its finest setting and ground coffee has a feel of caster sugar in terms of grain size which I understand to be about right.

I've done the 9 bar conversion, but still pulling 36g from 18g in 15 seconds or so. I've tried bottomless portafilter as well as the Gaggia supplied portafilter.

I quite enjoy drinking the shots I am producing, but feel I must be missing something due to the fast pull.

Without breaking the bank, or requiring an electrical engineering apprenticeship, where can I go from here? I prefer a dark roast by the way.
