Inherited a Brick Fireplace

We just inherited a brick fireplace that had been painted grey by the previous owner. I’d love to strip it back to brick, but that seems nearly impossible.

We like the “rustic, european cottage” look. We’re planning to paint Sherwin Williams Dried Thyme on the bottom 3/4 of the wall and Alabaster on the top 1/4. (Similar to the second photo here: https://blog.sherwin-williams.com/projects/project-inspiration/painted-woodwork-projects-evergreen-fog/) Eventually, we’d love to reface the whole fireplace with stone, but that project is years down the road.

So what do I do in the meantime? I hate the grey brick. Do I paint it Alabaster? Dried Thyme? Urbane Bronze? Another color? Is there another solution I’m not considering?
