What are your go-to recipes for smoking Brisket? Time, temp, seasoning, injections, spritz mix, binders, etc.
Everyone and their mom will be smoking a brisket for the 4th so what better time than to see how everyone’s smoking theirs.
Lately I’ve been using mustard to bind and the meat church holy cow and gospel rub. 250 to 165 internal temp and then spritzing apple juice/ apple cider vinegar on butcher paper and the brisket, wrap it and send it at 275 until internal temp is 200 - 203.
2nd brisket I’ve trimmed. Let me have it
Also, should I be concerned about the pothole on the fat side effecting the cook? It came like that.
