
Carpano Sour
Inspired by the Aperol Sour originally posted by u/withnailish a while back.
I tried the original and enjoyed it but was looking for a sharper edge. Tried it with Campari, nice but still not quite it. Then Carpano, same result. So I swapped out the lemon juice for lime juice and BINGO, that's what I was looking for.
I didn't have the cocktail foamers used in the original post, I had aquafaba (the liquid drained from a tin of chickpeas) in the house so used that for the foam. Swapped the 2.1 sugar syrup for just a straight 1.1 and this was sweet enough for me.
45ml Carpano
15ml gin
22ml lime juice
10ml sugar syrup
25ml aquafaba
2 shakes of Angostura bitters
Dry shake with ice, add ice, shake until cold. Strain into glass.
