Recommendations for a group of middle aged ladies wanted!

I am coordinating a ladies trip in September (yes I know it's hurricane season) and am looking for recommendations. We will be staying two nights in San Juan over the weekend and I am looking at rentals in Old San Juan and Condado then renting a car and staying in a condo in Palmas Del Mar, Humacao for five nights. None of us have been to PR and while we will participate in some tourist activities none of us want to hang out with all the cruise ship people while we are in town.

Here is what I'm hoping you all can help with:

Moderately priced restaurants in San Juan and Humacao

Must see things in San Juan and the east/south-eastern part of the island- already on the list are the El Yunque National Forest, Vieques and/or Culebra. Anything tied to art/culture would be appreciated.

Best beaches in/around Palmas Del Mar

Is it worth it to spend a day in Ponce?

Are there any highly recommended tour groups/agencies that base excursions out of Humacao or Fajardo?

Also, how is driving around the island on the main roads?

We are so excited to go on this adventure and want to make sure we are respectful of the island and really want to try to make sure our money is spent in places where the residents will benefit first.
